    In honor of National Goat Cheese Month, this week's UNC REX Healthcare Spotlight Vendor is Paradox Farm Creamery! 

    How did you get into the cheese making business? Cheese making was the ongoing accidental forward step from raising goats. After reading a list of things you should like to do for running a dairy…. of which we answered NO to all of them.. we went forward anyhow. We became a licensed creamery in 2011.

    What is your favorite Paradox product? Any favorite recipes? My favorite cheese is our Feta Complee, a goat milk brined feta. We took a blue ribbon in the 2017 NC State Fair with it! I tend to put it in a green salad with olives or with strawberries  or make it a fruity salad with apples and walnuts. All depends on what is in season. This time of year I love it with watermelon, blueberries and mint.

    What do you do for fun in your free time? Free time? Hahahahahahahhaha… what’s that?

    Red Roots Farm is a sustainable farming project in Silk Hope, NC. They grow vegetables, herbs, and mushrooms on about two acres of land. They do not use any synthetic pesticides, herbicides, fungicides, or fertilizers on their crops.
